  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn, frozen or fresh
  • 2 cups fresh spinach, chopped
  • 1/4 cup Greek yogurt
  • Juice of 2 limes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  2. In a large bowl combine cooked pasta, black beans, corn, and chopped spinach.
  3. In a small bowl whisk Greek yogurt, lime juice, olive oil, salt, and pepper until smooth.
  4. Pour dressing over pasta mixture and toss to coat evenly.
  5. Chill for at least 30 minutes before serving.
